On Monday, I had a craving for Corn Chowder, and I found a Corn Chowder recipe in the Better Homes and Gardens New Cook Book on p.506.
I followed the recipe, but I made several substitutions to the recipe to make it vegan.
Here is the recipe.
Prep: 30 minutes
Cook: 20 minutes
Makes: 6 side-dish servings about 5 ½ cups
6 ears of fresh corn or 3 cups frozen whole kernel corn
½ cup chopped onion (1 medium)
½ cup chopped green sweet pepper
1 tablespoon cooking oil
1 14-ounce can chicken broth-replaced with Vegan broth
1 cup cubed, peeled potato (1 medium)
4 teaspoons all-purpose flour- replaced with Cornstarch
¼ teaspoon salt
¼ teaspoon black pepper
1 ½ cups milk-replaced with one13.5 FL. Oz (400mL) can of Coconut milk
3 slices bacon, crisp-cooked, drained, and crumbled, or 2 tablespoons cooked bacon pieces-omitted
2 tablespoons snipped fresh parsley (optional)
Directions:
- If using fresh corn, use a sharp knife to cut the kernels off the cobs; you should have about 3 cups corn. Set corn aside.
- In a large saucepan cook onion and sweet pepper in hot oil until the onion is tender but not brown. Stir in the chicken broth and potato. Bring to boiling; reduce heat. Simmer, covered, for 10 minutes. Stir in corn. Cook, covered, about 10 minutes more or until potato and corn are tender, stirring occasionally.
- In a small bowl combine flour, salt, and pepper. Stir milk into flour mixture; add to corn mixture in saucepan. Cook and stir until slightly thickened and bubbly. Cook and stir for 1 minute more. Add crumbled bacon; heat through. If desired, garnish each serving with parsley.

Did I make substitution for this recipe? What substitution did I make?
Yes, I made several substitutions for this recipe. First, I repurposed the corn on the cob from barbeque on Sunday by cutting the corn off the cob and using it for the corn chowder.
Secondly, I replaced the regular chicken broth with Orrington Farms Vegan Chicken Broth Base & Seasoning. I used four teaspoons and two cups of water for the corn chowder recipe.
Third, I replaced the milk with Azul Coconut Milk 1 can 13.5 FL OZ
Fourth, I omitted the bacon and fresh parsley.
Fifth, I added two additional seasonings of Garlic Powder and Onion Powder.
With all of the above substitutions, the Corn Chowder turned out delicious.
Did I have any assistance with making the Corn Chowder?
Yes, I did. This was my first-time making Corn Chowder. I asked my youngest son for assistance because we could learn and prepare the dish together.
I had an amazing time prepping and cooking with my youngest son. He learned a lot from me, and I learned a lot from him. I learned that he retains and apply information about cooking. I am one proud Mom to have a son who enjoys assisting me in the kitchen. Next time, I will have both of my sons assist me with a meal.
Although it was my first time making the Corn Chowder, it was absolutely delicious. My husband, oldest son, and I enjoyed the Corn Chowder.
